Taco Tuesday: Crunchy Chicken Bake

Who remembers the pepper incident?
It happened while the kids were helping me make this recipe!




Days later...I found more pepper!

I used 4 thawed chicken tenderloins. Rolled them in salsa, then rolled them in tortilla chip crumbs. Top with cheddar cheese, then bake at 400 degrees for 10-15 minutes. 

This was quick and simple. Both of our kids ate it, hooray! I think it's pretty adaptable too, if you wanted to use ranch dressing instead of salsa, or even green enchilada sauce. The possibilities are endless! Enjoy!
